Joe’s Kitchen
Joe is from Nakhon Phanom in Thailand's Northern Eastern region. After moving to Singapore in 1999, he worked as a chef at Parkway Thai Restaurant for 6 years before deciding to pursue his and his wife's goal of opening their own restaurant. Joe's Kitchen specializes in cuisine that reflects the features of central Thailand.
Starting with appetizers, Thai shrimp cakes are wrapped in bread flour and made with fresh shrimp that are diced, regular, and chewy when eaten. The tom yum soup, served with straw mushrooms, is exceptionally hot, as is the dry curry chicken, served with steamed rice. Shrimp fried rice with omelet has a unique fatty flavor due to the addition of coconut milk and a few pieces of mango to the recipe.
