The three stigmas from each bloom are plucked, laid out on trays, and dried over charcoal fires for use as food flavoring and coloring. Saffron is made up of 75,000 blooms per pound (0.45 kilogram). Picrocrocin is the main component of saffron's essential oil, which makes up 0.5 to 1% of the total. Crocin is the coloring agent.
