Antimicrobial Properties
The alligator pepper extract has antimicrobial properties due to its constituents of phenolic compounds that are normally used as disinfectants. This pepper extract has a broad spectrum of activity, according to studies, and so inhibits the growth of bacteria such as Salmonella typhi, Staphylococcus aureus, and Klebsiella pneumonia, among others.
All of the bacteria species studied were suppressed by the seed extract of alligator pepper, indicating that this plant extract has a broad spectrum of activity (acts against a wide range of disease-causing bacteria). At high doses, the extracts showed increased antibacterial action against E. coli, Klebsiella spp., and salmonella spp. The discovery that alligator pepper can stop bacteria from multiplying in the lab has the implication that alligator pepper when taken as a normal spice, can help the human body fight disease-causing microorganisms.
