Hiding in Plain Sight

HPS, a cocktail jewel on the edges of the Jodenbuurt's north-eastern suburbs, lives true to its moniker. The modest ground-level bar and cramped dining area don't appear to provide much more than the staff's smiles when you first walk in. However, a luxuriantly louche leather-couch seating, located up a flight of stairs, puts you at eye level with chalkboards full of chemistry notations over the bar. Bookshelves and faded curiosities like an ancient radio, pinned butterflies, and pocket-watch motifs are set against a backdrop of florid wallpaper.

Free water, gigantic, fresh green Cerignola olives, mixed nuts, and a stack of stunning letterpress-style menus will soon come, accompanied by beautifully dressed service members. And the menu is focused on the 16 craft cocktails available, which range in price from €8 to €16. The 'Walking Dead', a house specialty with cinnamon sprinkles that crackle and flash as the drink is set on fire at your table, costs €16.
