Gaia provides a menu experience that is served simultaneously to all diners. The seating is arranged around a bar in front of the open kitchen, giving guests a clear view of the cook's operations. Chef Raz Rahav creates the menu, which changes from time to time, drawing inspiration from local culture, raw materials, history, and "chutzpa", while keeping in mind the availability of raw materials and the season, as well as influences from across the world and recollections.
The nature of the lunch necessitates the use of a set menu, which is not provided to the diners when they arrive. They invite you to come with an open mind and share fresh flavors and raw ingredients with the other diners. Simultaneously, they are mindful of dietary restrictions such as pregnancy, veganism, vegetarianism, kosher adaptation, and allergies. Please make sure to specify it while making your reservation. During the meal, they will not be able to change the menu.
