Tracy Chang, a rising star who got her start at O Ya and built a reputation for herself with Guchi's Midnight Ramen, an underground ramen pop-up, is in charge of Pagu in Central Square. The two-story, modern apartment is guarded by relatives who work as servers. Even the name is delightful: "pug" in Japanese and a tribute to Chang's own canine trainer, Phoebe. But the real discovery here is the food: ikura avocado toast, hog belly bao, sea scallop sashimi, and familiar dishes like Chang's mom's fried rice.
