Brass Spoon
What began as a little pho store has swiftly grown into a popular restaurant, keeping chef Sebastien Vong busy. He learned to cook in France, where his family operated a Vietnamese restaurant, and he chose Moon Street in Wan Chai—a little street—to reproduce the sense of arriving home from work and discovering a modest noodle business, comparable to ramen restaurants in Tokyo.
