This restaurant on Wan Chai's Lun Fat Street is run by Vietnamese cuisine master John Nguyen, who serves a variety of tempting dishes, including the 12-hour braised beef tongue salad ($128), which is made with pomelo, green mango, herbs, and a homemade citrus dressing; and crispy fresh grouper spring rolls ($138), which are filled with crab meat, herbs, and chef Nguyen's homemade fish sauce. Pho is served here in the northern Vietnamese manner, with pickled garlic instead of fresh herbs, and a tasty Chinese doughnut on the side.
The noodle dish is available in a variety of flavors, including prime rib ($148), chicken ($138), and the Xuân trademark beef pho ($168), which is cooked with Angus prime rib, braised beef tongue, and oxtail, and served with a 24-hour beef broth created from scratch. In addition to these delectable treats, chef Nguyen prepares a number of bigger meals for sharing, such as Cm Gà Hoi An Chicken Rice ($178).
