The samosa chaat included plump, crisp slices tucked into a stew of earthy, cumin-flavored chickpeas, sprinkled with vibrant green mint dressing, gooey tamarind, and stark white yoghurt. Pomegranate seeds and purple micro-herbs added a last rainbow flourish that elevated the flavor and added a touch of elegance to this classic Punjabi snack.

Either that more-is-more, carnivalesque attitude to flavor and color was used in the dishes, or they were fearlessly simple. A notable example of this is the methi makai masala, a silky, bright green spinach stew with luscious corn kernels that appeared uncomplicated but actually had a delicate undertone of fresh fenugreek. The white fish in their Goan seafood moilee succumbed to the golden turmeric, mustard seed, and coconut sauce at the touch of the fork, in contrast to the way fish curries are frequently overcooked.

In fact, almost every dish in Dhaba@49 was excellent: the buttery layered lachha paratha, the fluffy pilau rice, even the deep-fried spinach leaves, which were done to exacting standards. Although it may be based on roadside food, this eatery is definitely worth the trip. Deliveries and takeout continue to be made.
