March's staff is taking diners on a new adventure this spring, this time to the historic region of Occitania, which stretches across southern France. Classics such as bouillabaisse, a shellfish stew; cassoulet; and a Mont Blanc dessert with Alps-inspired cream puffs are among the dishes reinvented.
