Misono
Misono was founded in 1935 and has remained a tiny, entirely family-owned firm for decades. The firm originated as a manufacturer of kitchen tool blades for vegetable peelers. Misono didn't start manufacturing their own knives until the late 1960s. Misono is now Japan's oldest Western-style knife manufacturer, employing only fifty people and manufacturing 150,000 knives each year.
Misono's collections include all of the most popular Western knife types, such as chef knives, paring knives, and Santoku, all of which are manufactured of molybdenum steel or Swedish carbon steel. They do, however, include Japanese embellishments that give them a slick, professional appearance.
Misono is a good option if you enjoy the familiarity and dependability of small enterprises. It began by specializing in vegetable peelers. The firm produces just seven knife designs, with a few variants and sizes per category, for Japanese dishes such as sushi and ramen.
