Giovanni and his kitchen team take great care in sourcing the best local, seasonal ingredients as well as high-quality Italian products. The cuisine includes traditional Sardinian cuisine, reinterpreted using modern techniques while staying true to tradition and regionality. Handcrafted fregola is baked in a wood-fired oven before being slathered with prawn sauce and butter. Pilu uses delicious West Australian scarlet prawns in this dish, making it a great standout. The most difficult aspect of lunch at Pilu is deciding on the main course that will leave enough room for the dessert menu.
