Pumpkin Pie
Equatorial Guinea's traditional pumpkin pie is one of the country's most delectable sweets. Its smoked variation, which includes pumpkin, nutmeg, ground ginger, cinnamon, smoked maple syrup, allspice, and brown sugar, is also popular. For a greater taste, some locals add pure cream while serving.
Ingredients
- 1 (15 ounce) can pumpkin puree, 1 (14 ounce) can EAGLE BRAND® Sweetened Condensed Milk, 2 large eggs, 1 teaspoon ground cinnamon, ½ teaspoon ground ginger, ½ teaspoon ground nutmeg, ½ teaspoon salt, 1 (9 inch) unbaked pie crust
Instructions
- Preheat oven to 400F/200C.
- Cut the bananas into thick slices. Arrange them in a baking dish.
- Pour the butter. Drizzle the orange and lemon juices.
- Sprinkle with cinnamon (optional). Sprinkle generously with brown sugar and coconut.
- Bake for 10 minutes.
- Remove the bananas from the oven.
- Put a little honey on each.
- Return to oven in grill position and brown the top (about 2 minutes but watch closely).
