Sopa de cacahuete
A delightful peanut and fish soup is Sopa de Pescado with Cacahuete. This delectable cuisine is consumed by the locals throughout the year. It is extremely nutrient-dense. Fish, onions, peanuts, and tomatoes are key ingredients in this meal. This dish can be prepared in a variety of ways. Peanuts are also avoided by some people
Ingredients
- 1 liter of fish broth, 1 bottle of coconut milk, 2 units of Onion, 2 units of Tomato, 1 piece of fresh ginger, 1 unit of red chili, 50 g Peanuts, 1 stem of lemongrass, 1 teaspoon coriander powder, 1 teaspoon of curry, 12 units of scallops, thai basil, Black, pepper, Olive oil, Salt
Instructions
- Peel and chop the onions and tomatoes.
- Pour a splash of oil into a saucepan and fry the onion and tomato with a little salt and pepper.
- Add the curry, some Thai basil leaves, the ground coriander, the chopped chili and the lemon grass stem.
- Cook for a couple of minutes and add half of the peanuts, the fish stock and the coconut milk.
- Cook for 10 minutes over medium heat.
- Remove the stem of lemon grass and mash well.
- Season the scallops with salt and pepper and cook them on the grill.
- Serve the soup with the scallops, the rest of the peanuts and some Thai basil leaves.
