If you want a lighter, more refreshing potato salad, try a light, lemony vinaigrette instead of a creamy, rich mayo-based dressing. For starters, mayonnaise contains an egg, and if there's one thing you know about eggs, it's that they shouldn't be left out in the sun unrefrigerated for hours at a time.
