Arayers
Arayes (also spelled Arayess or Arayes) is one of the best street foods in the Middle East that consists of grilled or baked stuffed pita bread filled with a flavorful mixture of ground meat, spices, and herbs. It is commonly found in countries like Lebanon, Syria, and Jordan, and is enjoyed as a street food or appetizer.
To make Arayes, ground meat, typically a combination of beef and lamb, is mixed with a variety of spices and herbs. Common spices used include cumin, paprika, cinnamon, and black pepper, while herbs like parsley and sometimes mint are added for freshness. The mixture is seasoned to taste and can be customized based on personal preferences.
The pita bread used for Arayes is usually split open, creating a pocket that can be filled with the meat mixture. The seasoned ground meat is spread evenly inside the pita bread, and the bread is then pressed together, sealing the filling inside.
Arayes can be cooked in different ways. One popular method is grilling the stuffed pita bread on a barbecue or grill pan, which adds a smoky flavor and creates a crispy exterior. Alternatively, they can be baked in the oven until the meat is cooked through and the bread is toasted.
Once cooked, Arayes are typically served hot and can be enjoyed as a standalone snack or appetizer. They are often accompanied by condiments like tahini sauce, garlic sauce, or yogurt-based dips. Arayes can also be served alongside a fresh salad or pickles to balance the flavors.
