Cantillon
Cantillon is one of the few remaining traditional Belgian brewers, specialized in lambic and gueuze beers, and was founded in 1900. The brewery was formerly one of several classic places in Brussels, but it is now the only one that has thrived and grown through time. Much of the manufacturing equipment hasn't changed in over a century.
Climate change has begun to have an influence on the brewery's capacity to produce its characteristic open-fermented sours, although Cantillon is still regarded as one of the top sour breweries in the world. A museum dedicated to the history of the gueuze style is also located on the premises.
