Potatoes, seafood, rice, and vegetables are all available in Lesotho. The Basotho's daily staple is pap-pap or papa, a cornmeal porridge that can be covered or accompanied by a thick sauce made of peas, vegetables, or chopped greens, or a protein pulse made of beans or peas. Tubers, roots, potatoes, and wild spinach are commonly used. In most family gardens, cabbage, peas, pumpkins, and sugar beans are grown. Seasonal fruits such as peaches, quinces, apples, apricots, and pears become staples during the warmer months; walnuts are also harvested as a food source. During the winter, dry ears of corn are roasted while the family gathers around the fireplace to stay warm.
The main culinary centre in Lesotho is the capital Maseru, which boasts a fair selection of a la carte restaurants serving one or other international cuisine, be it Italian, Portuguese, Chinese or Indian, along with several fast food franchises from neighbouring South Africa.
