Fufu

Another popular traditional Congolese dish is fufu. Fufu is a popular staple in most African countries, particularly in the western and central regions. This Congolese dish is porridge-like and frequently made with plantains, yams, and cassava. The ingredients are boiled together, and once soft enough, the mixture is pounded with a pestle and a wooden mortar. Once the mixture has been pounded into a smooth paste, it is divided into small pieces and rolled into balls.
