Simpleness, seasonality, and kikubari—the Japanese skill of providing for others by expertly predicting their needs—are main concerns. No more than 50 meals a night are made using seasonal ingredients from artisanal purveyors and growers using time-tested methods. Nothing is ignored, from aged soy sauces to fresh wasabi. Their kitchen offers entire, balanced meals along with omakase progressions according to seasons using such ancient techniques as agemono, yakimono, nimono, and tsukemono.
