Le Shanghai welcomes you in a somber environment in the centre of Liège, near the Cathedral, the Saint-Paul, Charles Magnette, and Cathedral car parks. Pai Pin Chou has been in charge of the restaurant since 1963, and the recipes have improved over time, while the wine list, which won the National Prize for the finest menu in 1996, has expanded. Shanghai's wines are kept in a mature cellar beneath a church that offers the greatest humidity, temperature, and aeration conditions. The menu allows wine lovers to create the most perfect meal and wine pairing possible. To do so, keep in mind that the famed Wine Duck pairs well with Bordeaux reds, whilst Duck à l'orange is better with young Burgundy, and the Ginger Steamed Fish pairs well with the wine. In a sweet and sour sauce, red or pink Loire and similar kinds cooked with seasoning would be like a Gewurztraminer. The same can be said about Lobster with Ginger, which pairs well with Smoked Pouilly or a more robust White Burgundy.
Poultry and sweet-and-sour meat dishes were more popular than reds from good sources, such as Alsace or the South, Crus Beaujolais, and even Italian reds. If these items have been fortified, look for wines from Languedoc or the Côtes du Rhône that are more liberal. When it comes to unseasoned meals, any wine that does not overwhelm them is appreciated. In addition, a day basement has been installed in the restaurant, which is strictly monitored in terms of temperature and hydrometers visible from the outside.
