Oishi Thai

Another instance of delectable Thai food may be found at a strip mall. The quality here shines through despite the simplicity of the food. People, stick to the oldies. Almost everybody with a tongue will be satisfied by a pork pad thai with egg, onions, bean sprouts, and ground peanuts. Fans of birds will adore the panang curry-marinated duck, while those who prefer seafood should choose the lobster tails with their twins in a fiery volcano sauce.

Piyarat Potha Arreeratn, more commonly referred to as Chef Bee, was born in the sleepy town of Ban Sankhohiang in the northern Thai province of Chiang Rai, close to the borders with Laos and Myanmar. Born from a family of farmers, he gained an early appreciation for food from his mother, who taught him how to grow his own food, various methods of canning and preserving it, as well as the wide range of flavors found in Northern Thai culture. Summers were spent by Chef Bee with his grandparents in the nearby town of Ban San Macade, where he was taught how to make Thai street food such as "Jin Som" (marinated pork), "Kab Muu" (crispy pork rinds), and "Rang Nok" (sweet caramel shredded taro).
