The author Edgar Castrejón became a vegan as a college student after realizing that eating a plant-based diet made him feel better, but he was concerned that he would no longer fit in at the table with his family. Edgar, a proud first-generation Mexican American growing up in Oakland, had spent countless hours in the kitchen with his mother, aunts, and grandmother, where family recipes were passed down through "las manos mágicas". As a result, Edgar began experimenting with healthier, meatless versions of the dishes he grew up cooking and eating.
Provecho contains one hundred of Edgar's inventive vegan recipes that pay homage to the traditional, often meat-heavy classics of Mexican and Latin American culture while cooking with compassion. Many are thirty minutes or less in length, use readily available ingredients, and have Salvadoran and Colombian influences. And they're all organized around how Edgar's family approaches meals.
