Rosa Cienfuegos Tamaleria, Dulwich Hill
Rosa Cienfuego's tamaleria in Dulwich Hill is one of the few places in Sydney that serves true Mexican street cuisine, particularly tamales.
This charming small restaurant looks right out of Oaxaca and is known for its homemade tamales, which have a softened corn husk, shredded chicken, and a healthy dose of salsa verde. 'masa', a combination of cornflour, lard, baking soda, and chicken stock – is spooned over a softened corn husk to form those tamales. After adding shredded chicken and a teaspoon of salsa verde, the mixture is formed into a compact rectangle. The deli offers two types: Mexico City-style pollo con salsa verde (green salsa chicken) steamed in a corn husk and Oaxaqueno-style pollo with salsa verde (mildly spicy Mexican capsicum with cheese) steamed in a banana leaf.
