Sonora, Potts Point
The team behind Bondi's Taqiza, Carbon, La Palma & Calita has established a high-end Mexican restaurant and mezcal bar, inspired by the burgeoning culinary culture in Mexico City's fashionable enclaves of Roma and Condesa. The menu is influenced by Sonora cuisine, a coastal state in Mexico's northwestern region that shares a border with the United States (the states of Arizona and New Mexico), where flour tortillas are favored over corn tortillas.
Sonora has a creative menu created by their head chef Juan Carlos, who comes from Baja and proudly uses his grandmother's traditional method to produce their flour tortillas, which go well with their tomatillo, herbs, serrano, and pomegranate guacamole! Grilled market fish drizzled with habanero oil for just a little spice, topped with mango mezcal salsa and a side of a la talla sauce is a crowd favorite. Sonora serves Tasmanian grilled octopus zarandeado (a traditional Mexican style of grilling that dates back over 500 years) with tatemada ink sauce as one of their most inventive dishes.
