  1. 56 North is well known for specializing in the increasingly popular 'mothers' ruin'. This is a style-bar-with-kitchen that offers gin masterclasses, has a list of the spirit that runs to several pages, and even opens its car park as a gin garden in August, in association with Tanqueray. You can even select from a dozen tonics or mixers and 14 separate garnishes.


    Aside from the gin, the food is above average for a pub, with superb steaks and gourmet burgers on the menu. The latter is available in 8oz Scottish steak mince burgers, as well as chicken or veggie burgers in a variety of styles. There's a Stornoway (with apple compote, black pudding, and haggis), a Classic (with cheddar, chutney, and pickle), and a fairly intense but tempting Derby (with blue cheese, jalapeno, and smoky bacon).

  2. This Grassmarket bar has three levels, including a rooftop deck perfect for drinking in the summer. Cold Town House is devoted to pretentious pizza, beer, and prosecco, and was inspired by a desire to go beyond hipster-for-the-sake-of-hipster. They also brew their own lager and pale ale, which you can see from the first floor's floor-to-ceiling windows. They make their own beer in their microbrewery. Enjoy a pint of Cold Town Beer, which was born and made in Edinburgh, or treat yourself to one of their new stunning Cold Town Beer towers, which hold up to 6 pints to enjoy with your friends. And when it comes to cocktails, you'll find the perfect combination to wash it all down, whether it's a classic cocktail you know and love or a fresh new Cold Town exclusive.


    They also have delicious Neapolitan pizzas, hanging grills, and burgers. On the Pizza and Prosecco level, you can even view their handcrafted pizzas being assembled before being stone-fired in their custom-built oven. Every pizza is named after a different Edinburgh suburb and has a Cold Town twist. There will be no snow, but there will be a festive atmosphere and the best view of Edinburgh Castle from the esplanade.   3. The Hanging Bat is an outlier on the Edinburgh bar scene in that it appears to have abandoned many typical bar-like trappings in case they interfere with enjoying a good beer. There is no cocktail menu, although there is a tiny range of spirits, notably gin. With blinding lights, glass doors, and tall grey walls suggestive of a brewery, there are no softly lit spots for a private encounter. There are no pints; instead, customers sip their drinks from schooners (eg 2/3 pint cups) to avoid overindulging and losing appreciation for the craftsmanship behind the brew while still paying print pricing.


    Lager consumers will only get one or two tiny concessions among the 21 barrels and kegs available on any given day, while cider lovers will have to make do with the limited selection of bottles behind the bar. The menu is similarly uncompromising, with a huge selection of hot dogs and meatloaf burgers leaving vegetarians with few options. Keep these considerations in mind only if you're traveling with folks who don't all share your excitement for craft beer. If they do (or you're willing to limit your group to those that will), the Hanging Bat is one of the few places in town that will devote such close attention to the brewing of good beer.

Hoot the Redeemer, a city center bar with a hipster twist, is located in a basement just off Princes Street, securely away from the more traditional bars and pubs along Rose Street but still a short walk from the Cowgate's major nightclub scene. After passing by the fortune teller robot on the entryway, you'll be met by antique pinball machines and made-up tarot cards on the wall. In addition to a range of drinks, the menu compliments the funfair vibe by serving boozy ice creams and slushies.


    They proudly stock only Scottish beer and cider to lower their carbon footprint and implement more environmentally friendly methods. The Blackbird, located on the border of lively entertainment area Tollcross and the little more tranquil bistro ambiance of Bruntsfield, attracts a hip-young-thing audience who produce a not-uncomfortably-busy atmosphere most nights of the week. Both the food and drink menus reflect the customer base: beers are typically continental or craft, and the food selection includes a few admirably adventurous veggie-friendly options (not least a caramelized pear and cashew salad, which carnivores can upgrade with chicken or tiger prawns for £4, or the oven-baked aubergine, zucchini, and spinach cake with goat's cheese).


    The cocktail menu is also well-curated, with edgier titles like Shotgun Shoes and Unorthodox Behaviour complementing the more conventional mojito, daiquiri, and cobbler crowd. If all of that gets to you, there's still the peaceful, soft-lit beer garden to go to, tucked away from the hectic Tollcross traffic. The service and staff are excellent.
