  2. Space Cowboy is the first project from Night Moves Hospitality, and it features a menu of island-inspired food from chef Lyle Bento and a lineup of tropical-inspired beverages from bar managers Samantha Ruiz and Karen Cervantes (both formerly of Monkey's Tail).


    The bar has 35 seats inside, but the true lure of Space Cowboy is the 2,000-square-foot patio and adjacent 4.000-square-foot green space next to the hotel pool. Space Cowboy is open to both diners and hotel guests, with features such as poolside cabanas. Drinks range from alcoholic concoctions to lighter sips that are perfect for a leisurely beach afternoon. The Comin' 2gether (house banana rum, Screwball whiskey, and a papaya popsicle), the El Pajaro (Campari, white rum, Apaluz mezcal, and pineapple juice), and the Cream Fortress (aguardiente, mango, kiwi, coconut, and boba) are among the options you can try.

Cocktails made with ingredients from local urban farms and an immersive, changing drink menu with unlikely pairings are available at this sister bar of chef Brandon Silva's tasting restaurant Degust. To make all ingredients from scratch, the bar chefs find the best produce, clean, cut, and process it. In its 10,000 square foot urban farms in the Heights and Spring Branch, it grows its own produce.


    It makes cordials, infusions, tinctures, preserves, ferments, and vinegar from fresh Texas produce. Everything is created from the ground up.   4. If you've ever wanted to be your own restaurant bartender, Shoot the Moon, Houston's first self-service bar and restaurant, is now your chance. This new pour-your-own bar has over 80 taps of beer, wine, and batch cocktails, and diners may serve themselves anything from a single ounce to a full glass, allowing you to taste different options before committing to a full glass.


    Guests may serve themselves cider, beer, wine, cocktails, and spirits at the 4,000-square-foot Spring Branch restaurant. The 80 selections on the self-pour tap system include 20 wines and eight spirits. Guests may sample small portions before committing to full glasses; there's even crushed or cocktail ice to choose from. For use with the self-pour taps, single-use gloves and sanitizing wipes are provided. STM's menu features delicious thin-crust pizzas and sharable meals that will keep you coming back for more.

    Trash Panda has moved into the former Edison & Patton site. Hando, a Heights handroll sushi restaurant, has transformed an unused hallway next door into a bar, which is excellent for late-night nibbles or a few cocktails while waiting to be served at the restaurant. This cozy bar, inspired by Japanese alley bars, provides beverages made with yuzu, umeboshi, and Japanese whisky, as well as small meals from Hando's cuisine.


    There are several exclusive-to-Kanpai-Club drinks, such as the punchy rye-based and winter-spiced Rye Slamma Jamma. There are also a variety of Japanese whiskeys and rums available. The first, dubbed Lombok, will be a patio bar serving Southeast Asian-inspired appetizers and beverages.     This magnificent cocktail bar earns its name thanks to a mean house Mint Julep, a refreshing gimlet, a traditional Old Fashioned, and dozens of skillfully prepared cocktails to select from.


    The drinks menu is divided into three sections: juleps, house cocktails, and classics. Classic mint juleps are available, as well as twists that change seasonally.   10. Clarkwood is an elegant cocktail and wine bar nestled in a historic theater with a chic feel. This Old Hollywood-style bar in the Allen Parkway corridor is trendy but vintage, offering the ideal setting for classic drinks.


    The design was influenced by the building's original structure, which featured a white exterior with a Spanish-style orange roof. Clarkwood serves nine specialty cocktails, as well as a dozen wines by the glass and 30 bottles from a well-curated range. A Tableside punch bowl served with enormous chunks of ice and edible flowers is a highlight, as is an espresso martini garnished with a torched marshmallow.
