Analogue
If cocktails can make talks flow, then new bar Analogue is a conversation starter in more ways than one. The drinking studio is the latest endeavor of award-winning Native's Vijay Mudaliar, who intends to raise awareness about food sustainability issues through its fully plant-based menu, which is a first in Singapore. It all starts with the space, which is intended to foster conversation. The inside boasts a dramatic cerulean 3D-printed countertop that swirls and loops around beautiful columns and is located within the historic grounds of a renovated chapel. Smaller tables made of mycelium, a type of fungus, surround it.
To display old items in attentive and delightful new ways, the bar may rely on environmentally conscious substitutes - or analogs. However, Analogue has unintentionally developed a different way of ingesting that cannot be replicated. Soursop, which replaces over-farmed honey with a vegan alternative to create a pleasantly colorful and floral-scented sip, is a restaurant favorite. Adzuki retains the nutty scent of red beans without the overpowering sweetness. The buckwheat and matcha then contribute lovely earthy aromas.
