One of the most renowned Italian eateries in the past ten years is Carbone, which was founded by Mario Carbone, Rich Torrisi, and Jeff Zalaznick. Most likely the best way to put it is as described by The New York Times: "It is a fancy red-sauce joint as directed by Quentin Tarantino, bringing back the punch-in-the-guts thrills of a genre that everyone else sees as uncultured and a little embarrassing, while exposing the sophistication that was always lurking there. A lot of other restaurants appear like sincere, uninspired drones in comparison to the restaurant's technological prowess and sense for pure fun.


You must make a reservation in advance if you intend to eat at Carbone. Reservations for the New York transplant are fully booked a month in advance. It will be worth the wait to experience the Old World charm that Mario Carbone and his business partners Rich Torrisi and Jeff Zalaznick have developed. The eatery pays homage to traditional red-sauce eateries from New York City, but with a contemporary (and costly) twist. Classic dishes like veal parmigiana, minestrone, and baked clams are abundant on Chef Carbone's menu. Your Instagram feed may have featured Carbone's hot rigatoni vodka. Served on a hand painted plate from Umbria, it's worth ordering for the photo — but take the time to actually eat the dish, which is creamy, spicy, and ultimately worth the monthlong wait.
