Ingredients

- kosher salt

Instructions
- Whisk together the cinnamon and sugar in a small bowl and set aside.
- Line a large baking sheet with parchment paper and top with about two-thirds of the cinnamon sugar mixture.
- Cooking spray a 9-inch square baking dish, line it with parchment paper, and put it aside.
- In a 3 quart saucepan with a heavy bottom, add the butter, sugar, and salt.
- Over low heat, bring to a boil while stirring regularly to dissolve the sugar.
- Remove the candy from the heat after it reaches a temperature between 290°F and 300°F, then carefully whisk in the vanilla essence. Fill the baking dish with the liquid.
- Lift the toffee out of the baking dish and place it on a cutting board after letting it settle for 5 to 10 minutes.
- To cut the toffee into 9 squares, use a pizza cutter. Divide the toffee into pieces and allow to cool for a further five minutes, or until hard but still warm.
- According to the instructions on the package, melt the white chocolate wafers.
- Each piece of toffee should be dipped using tongs into the melted white chocolate before being placed on the baking sheet with the cinnamon sugar and further dusted with cinnamon sugar to thoroughly cover it.
- Wait at least 20 minutes for the white chocolate to thoroughly set before serving the toffee.
