Lettuce and Leafy Greens
One of the most popular vegetables in the US is lettuce, a type of leafy green. Leafy greens, which include varieties like spinach, romaine, kale, escarole, and endive, can be either dark or light in color.
Bread or wraps can be replaced with big-leafed greens like romaine or lettuce. These greens can be topped with foods such as meat, onions, tomatoes, carrots, and other vegetables. The leaf can also be used as a wrap, to hold everything together. Because they are naturally low in calories and sodium and free of cholesterol, leafy greens make a fantastic addition to a healthy diet. They are also strongly linked to a decreased risk of developing chronic diseases. So wraps made of lettuce are far more nutrient-dense than wraps made of bread and are also much fresher.
