Ablo represents yet another way to transform cornmeal into delectable dishes. It usually serves the same purpose as Fufu, as a side dish to accompany grilled meat, stews, soups, and other dishes. However, Ablo served alone with spicy chili sauces or tomato sauces is an inexpensive meal for many people.
To make Ablo, Togolese people boil cornmeal and rice flour in water before adding dry yeast to the mix. The leavening process follows, which takes a long time but helps the cakes become soft and moist.
Once the dough has begun to rise, divide it into small molds or bowls and place them in the steamer. After about 30 minutes, white and firm Ablo will be ready to eat.
