Peanut Soup

Peanut (or groundnut) is an important legume crop in Togo, providing a healthy source of protein and fat to the locals. Cooking peanuts into this hearty soup is one way to make the most of what peanuts have to offer.


While peanut soup may sound strange to many people around the world, it is a staple of African cuisine. Aside from a finely ground peanut paste, what distinguishes the soup are the exotic spices from the oldest continent. They are, in particular, bitter leaves and Uziza seeds (African black pepper).
