Central Restaurante
Central Restaurante is a restaurant in Lima, Peru's Miraflores District. Virgilio Martnez Véliz's flagship restaurant, Central Restaurante, serves as a laboratory for the exploration and integration of indigenous Peruvian ingredients into the restaurant's cuisine. The restaurant is noted for its modern version of Peruvian cuisine and presentation. Central Restaurante is described by GQ Latinoamérica as "the heart of his Virgilio Martínez Véliz gastronomic philosophy" The Peruvian eating guide SUMMUM selected Central Restaurante Best Restaurant of Peru in 2012.
Central Restaurante was named Best Restaurant of Peru for the third year in a row by the Peruvian Dining Guide, SUMMUM, on August 21, 2014, and also got prizes for Best Contemporary Peruvian Cuisine and Best Sommelier. Virgilio Martnez Véliz, the founder of Central Restaurante, has endeavored to revolutionize Peruvian cuisine by bringing little-known indigenous foods from Peru's coastal region, the Andes highlands, and the Amazon rainforest. Kushuru (cushuro), edible cyanobacteria gathered in high-altitude wetlands; arracacha, a root vegetable from the Andes; and arapaima, a freshwater fish found in the Amazon River, are examples of such ingredients. Geeta Bansal, a chef and restaurant critic, characterizes the cuisine as "fresh, and contemporary with beautiful plates".
