Peanuts contain a lot of fat. They are really categorized as oilseeds. The production of peanut oil consumes a significant amount of the world's harvest of peanuts (Arachis oil). The mono- and polyunsaturated fat content varies from 44-56% and is mostly composed of oleic and linoleic acids.
Although any diet containing enough anti-oxidant components can help prevent cancer, peanuts are unique in their capacity to lower the incidence of stomach cancer. Numerous polyphenolic substances, many of which are antioxidants, are present in peanuts. However, p-coumaric acid, a substance that lessens the production of hazardous nitrogen-based chemicals in the stomach known as nitrosamines, is of special concern. Because of the nitrates present in many preserved types of meat, nitrosamines are a frequent by-product of eating smoked meats.
