Hokkaido Ramen Santouka
One day, after watching Tampopo, a popular Japanese comedy about a quirky ramen establishment, the founder of SANTOUKA, Hitoshi Hatanaka, and his family stopped at a ramen shop to have a quick meal. Dissatisfied with the shop's ramen taste, Hatanaka announced that next time, he would be the one to make ramen for his family. This simple statement marked the beginning of the current flavor - the legendary RAMEN SANTOUKA.
Using the same recipe that won her family's support, Hatanaka decided to open her own ramen shop in March 1988, in Asahikawa, located on the northernmost island of Hokkaido in Japan. The restaurant started out modestly, with only 9 seats and one item on the menu - Shio Ramen (salted). At first, the shop was just another ramen shop in a town famous for its delicious ramen, but after tasting the legendary flavors of SANTOUKA, more and more hungry customers followed.
To get the light pearl-colored Tonkotso soup, they spend time simmering the pork bones before adding vegetables, dried fish, kelp and other special ingredients. They cherish the distinctive taste and flavor of their special soup, making sure it is never boiled. They aim to maintain the soup at the optimum temperature, for everyone to enjoy the best.
