Late July Snacks was founded by Nicole Bernard Dawes in 2001 when she was pregnant and couldn't locate organic saltine crackers. She had joined the company in 1996 and was instrumental in the introduction of a low-fat version of the company's famed kettle chips. They turned Late July into a nationwide organic snack brand with the help of her father and mentor, Steve Bernard, who had earlier founded Cape Cod Potato Chips.
