Locavore creates French-inspired variations on Filipino staples like Bicol exprés (spicy minced pork), kaldereta (beef stew), and, of course, halo-halo, using locally sourced ingredients to amazing effect (various fruit preserves served in shaved ice and milk). The famous lechón (suckling pig roast) and oyster sisig are to die for.
