Mad Zebu
The 'mad zebu' is the most out-of-place sighting in dusty Belo, if not all of Madagascar. The chef trained in prominent kitchens in Madagascar and Europe, so dishes like pan-fried zebu shin, prawn medallions, or snapper fillet with peanuts, rice, and coconut sauce seem like they came directly from a Michelin-starred restaurant.
Vegetarian choices are also available. Everyone traveling between Morondava and the Parc National Bemaraha stops here, and many businesses reserve tables in advance - do the same or expect to wait. The noon peak occurs at 11.30 a.m.
The Mad-Zébu Restaurant in Belo now opens its doors with a cuisine that is constantly sublimated and twisted by the remarkable ability of the founder's son, chef Onja. For over ten years, chef Onja and his wife Sarika have been able to imprint Michelle's kitchen with a delicate touch of inventiveness and modernism. The Chefs pair uses the greatest exotic ingredients, the rarest and freshest in the country, and is driven by enormous enthusiasm for cooking that he passes on to his crew every day.
