Oats can have their shelf life extended by an additional four months by freezing them in airtight containers. Oats are rich in B vitamins, magnesium, and zinc. The soluble fiber beta-glucan and antioxidants called avenanthramides are two special ingredients found in oats. Benefits include lowered cholesterol and blood sugar levels, protection against skin irritation, and decreased constipation.
