They still go to great lengths to find the best sustainable, local seafood available by collaborating with a number of purveyors, fishermen, and farmers. They only buy entire, fresh fish, which they then butcher in-house to ensure the highest quality. Their oysters are flown in from all across the United States, often straight from the farm where they are raised in pristine waters.

To guarantee the best quality and safety, each oyster is marked with the harvest location and the date. They constantly train their personnel so that they can explain to their customers about their cuisine, wine, and spirits. They put just as much effort into their non-shellfish fare if oysters and seafood are not your things. Quality ingredients always come first at The River Oyster Bar, whether it's grass-fed Florida beef, organic poultry, heirloom tomatoes, and honey from Homestead, microgreens from Hollywood, local shrimp from Cape Canaveral, or stone crabs from the Florida Keys.
