Their modernized interpretation of traditional cuisine will stimulate customers' palates.
It's astonishing what can be produced in a kitchen like the one at Spoke; it's one of the smallest in town, yet you'd never know it from the wonderfully prepared tiny plates that experiment with seasonal ingredients and sources of inspiration from around the world. One might eat duck hearts with a fresh cherry and whiskey sauce or sambal-cured mackerel with coconut, milk bread, and Thai basil. Also, as it is a wine bar, don't forget about the wines, which tango between well-known and obscure geographical areas.
