Turn leftover rice into an Italian appetizer
Italians have other fantastic applications for pre-prepared rice in addition to the basic elegance of risottos, and these dishes are prepared in a manner that is very familiar to most Americans. Arancini and suppli, two of the most popular fried rice balls, are these terms. Suppli is a bit easier to make than arancini and is frequently seen in Rome's tiny lanes. Also, it is smaller.
