50 Kal, which has been in Naples since 2014, launched in London in July 2018. 50 is a number that means "bread" (or "dough ball") in the Neapolitan tradition of dream interpretation, and Kal means "excellent" in the traditional spoken language of pizzamakers. 50 Kal (Good Dough Ball) is a brand name that quickly defines the synthesis of his work as a pizza master: his dough is created with carefully selected flour blends, loads, loads, loads of water, and a very slow, extended fermentation rise, with the final pizza topped solely with the best components.
Ciro Salvo is the third generation of a renowned family of professional pizzamakers. His study on exceptionally hydrated dough, in which a high percentage of water is added to the flour, has resulted in accolades and recognition from the most respected national and international food reviewers, with a special focus on the dough's lightness and digestibility. Originating in Naples, this classy place brings authentic pizza to Westminster, courtesy of dough-mad Italian superstar Ciro Salvo. Probably the only place in London where you can get an impossibly elegant capricciosa and a Nutella cheesecake.
Ciro Salvo's pizza is all about classic simplicity and striving for the finest. The Extra Virgin Olive oil, picked from among the best in Campania, is applied to the pizza only at the conclusion of baking, on the dish, and only organic tomatoes are used: peeled San Marzano, Corbarino, and Piennolo kinds by Casa Marrazzo. The menu is constantly revised based on seasonal ingredients: a continuous research that allows for the use of carefully selected products such as DOP and IGP products such as Provolone del Monaco, Ciauscolo Spredable Salami, and Parmigiano Reggiano aged 24 months, as well as regional food rarities such as Slow Food Presidium's Castelpoto Cured Sausage and Paternopoli Apriliatico Broccoli. The wine and champagne lists are noteworthy. 50 Kal di Ciro Salvo offers delivery services via Deliveroo, Just Eat, and Uber Eats, as well as through its own website (where you can also order a takeaway for collection).
