Chef Santi Santamaria was also a well-known avant-garde chef who was known for modernizing traditional Spanish food.

Blue lobster and hot-and-cold fish from the Ebro Delta were popular choices. It also produced special dishes to accompany the day's featured fish from the local market. Braised fennel with honey sauce and clams cooked with beetroots were also on the autumn menu. Fresh fruits, such as juicy pomegranates, and desserts, such as petit fours, were equally delicious.
