Amaranth contains antioxidants that are beneficial to one's health. According to one study, amaranth is particularly high in phenolic acids, which are plant components that function as antioxidants. Gallic acid, p-hydroxybenzoic acid, and vanillic acid are examples of antioxidants that may help protect against illnesses such as heart disease and cancer.
Amaranth was reported to improve the activity of some antioxidants and protect the liver from alcohol in one rat research. Raw amaranth has the highest antioxidant content, and studies have shown that soaking and processing it reduces its antioxidant effects. More research is needed to establish how the antioxidants in amaranth may affect humans.
