Cholesterol is a fat-like substance that is present all over the body. Too much cholesterol in the blood can induce artery narrowing. Amaranth has been shown in animal experiments to have cholesterol-lowering effects. In one hamster trial, amaranth oil reduced total and "bad" LDL cholesterol by 15% and 22%, respectively. Amaranth grain also decreased "bad" LDL cholesterol while raising "good" HDL cholesterol.
Research on hens found that eating amaranth reduced overall cholesterol by up to 30% and "bad" LDL cholesterol by up to 70%. Despite these encouraging findings, more study is needed to determine how amaranth may alter cholesterol levels in individuals.
