Fougasse (flat bread)

Fougasse, the French equivalent of focaccia, is a fresh flatbread baked with anything from herbs to olives and lashings of olive oil, often topped with cheese and served with fresh crisp salad and the famous Stocafi (fish stew). This bread, like focaccia, is dense and rich, making it ideal for mopping up sauce from any meal.
