La Mar, Miami
La Mar, one of Chef Gaston Acurio's most recent ventures, is located in Miami's Mandarin Oriental Hotel. The Peruvian chef is a fantastic representative of the country's passion for seafood. With the most vivid traditional and innovative Latin American seafood dishes, he brings out the heavy guns at La Mar.
The restaurant is lovely in and of itself, with stunning views of Miami's skyline, but you're here for the cuisine, right? On the specialized ceviche bar, there are 15 varieties of ceviche to choose from, as well as lots of hints of excellent Japanese cuisine. Peru has rich Japanese traditions, which have evolved into Nikkei cuisine.
