The Paddington restaurant swings through some of the best Australian seafood available, working into an imaginative menu that changes seasonally thanks to Josh Niland's refined approach and solid network. If you get there early enough, you might be able to score a few fun alternatives, like the $38 yellowfin tuna cheeseburger, which is simply constructed with a zuni pickle and swordfish liver bacon, and served with fries on the side.


A complete John Dory acquired from Corner Inlet in Victoria, cooked in bull's kelp and then served in the sauce of its bones with some roe, and large eye tuna from Mooloolaba served with bonito and wild kingfish are two current seasonal standouts. You go to Saint Peter if you want fresh fish prepared differently - no questions asked.
